We use chunks (not chips) of delicious Belgian chocolate, unsalted butter, wheat flour, can sugar and fresh eggs from chickens who are treated well.
First we make the cookie dough in our kitchen just outside Oxford. Then each store cooks it into satisfyingly chunky cookies all through the day.
